CLEAR CHICKEN SOUP
200 grams boneless chicken, cut into thin strips
1 tablespoon olive oil
1 fresh red chilli, finely chopped
4 cups chicken stock
Salt to taste
Crushed black peppercorns to taste
1 stalk spring onion greens, diagonally sliced
1. Heat olive oil in a non-stick pan. Add red chillies and sauté for 30 seconds. Add chicken strips, mix and cook for 1-2 minutes.
2. Add chicken stock and mix. Add salt and crushed peppercorns, mix and cook till the mixture boils.
3. Add spring onion greens, mix and cook for 1 minute.
4. Serve hot.
